Spiced Chickpea & Spinach Pan

One pan. Twenty minutes. Budget-friendly. Packed with phytoestrogens, magnesium, fibre, and liver-supportive spices.
Ingredients:
• 1 tin chickpeas, drained
• 1 tin chopped tomatoes
• 3 handfuls baby spinach
• 1 onion, diced
• 3 garlic cloves
• 1 tbsp olive oil
• 1 tsp cumin
• 1 tsp smoked paprika
• ½ tsp turmeric
• Pinch chilli flakes
• Juice of ½ lemon
• 2 tbsp ground flaxseed
• Salt & pepper
Serve with:
Soft-boiled eggs or Greek yoghurt + sourdough or brown rice
Method:
1. Sauté onion in olive oil for 5 minutes. Add garlic and spices; stir for 1 minute.
2. Add chickpeas and tomatoes. Simmer for 10 minutes until slightly thickened.
3. Stir in spinach, lemon juice, and flaxseed. Season and serve warm.

Why it works:
Chickpeas = phytoestrogens + folate. Spinach = magnesium. Turmeric = liver support. Flaxseed = lignans for hot flush support. Eggs or yoghurt = protein support.
