Golden Immunity Broth

 

Anti-inflammatory, gut-supportive, and genuinely one of the most nourishing things you can eat in winter. This fills the house with a smell that feels like a hug.

Ingredients (serves 4):

  • 5 litres chicken or bone broth
  • 1 thumb fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tin chickpeas, drained
  • 2 carrots, sliced
  • 1 cup baby spinach or kale
  • 1 tbsp extra-virgin olive oil
  • Juice of 1 lemon (add off the heat — preserves vitamin C)
  • Fresh parsley, salt & pepper to serve

Method:

  1. Sauté garlic and ginger in olive oil for 2 minutes. Add turmeric and cumin; stir for 30 seconds.
  2. Add broth and carrots. Simmer 15–20 minutes until carrots are soft.
  3. Add chickpeas and greens; cook 3–4 minutes more.
  4. Remove from heat. Stir in lemon juice, season, and serve with fresh parsley.
