Golden Immunity Broth
Anti-inflammatory, gut-supportive, and genuinely one of the most nourishing things you can eat in winter. This fills the house with a smell that feels like a hug.
Ingredients (serves 4):
- 5 litres chicken or bone broth
- 1 thumb fresh ginger, grated
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tin chickpeas, drained
- 2 carrots, sliced
- 1 cup baby spinach or kale
- 1 tbsp extra-virgin olive oil
- Juice of 1 lemon (add off the heat — preserves vitamin C)
- Fresh parsley, salt & pepper to serve
Method:
- Sauté garlic and ginger in olive oil for 2 minutes. Add turmeric and cumin; stir for 30 seconds.
- Add broth and carrots. Simmer 15–20 minutes until carrots are soft.
- Add chickpeas and greens; cook 3–4 minutes more.
- Remove from heat. Stir in lemon juice, season, and serve with fresh parsley.
