Mushroom, Spinach & Egg Energy Scramble

Serves: 1
Ingredients:
- 2 whole eggs
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1 tsp olive oil
- Salt, pepper, optional herbs
Optional:
- 1 slice wholegrain/sourdough/rye/gluten-free toast
- ½ cup cooked oats on the side
Method:
- Sauté the mushrooms:
Heat olive oil in a non-stick pan over medium heat. Add mushrooms and cook for 3–4 minutes until softened and lightly golden. - Add the spinach:
Stir in the spinach and cook for 30–60 seconds until just wilted. - Scramble the eggs:
Whisk eggs lightly with salt and pepper. Pour into the pan and gently stir until softly scrambled. - Serve:
Remove from heat while still soft. Garnish with herbs if using.
