Golden Ginger & Citrus Energy Balls

(Makes 16 / 15 minutes + 30 minutes chilling)

Keep these in the fridge all week – they’re the perfect answer to the 3 p.m. energy slump. No baking. No fuss.

Ingredients:

•   1 cup rolled oats
•   ½ cup desiccated coconut, plus extra for rolling
•   ½ cup almond or peanut butter
•   ¼ cup honey or date syrup
•   Zest of 1 orange
•   1 tbsp fresh ginger, finely grated
•   1 tsp turmeric
•   2 tbsp chia seeds
•   2 tbsp ground flaxseed
•   Pinch of black pepper
•   Pinch of salt

Method:

  1. Mix all the ingredients together until the mixture holds when pressed. If it’s too dry, add a little more honey. If it’s too wet, add a few extra oats.
  2. Roll into walnut-sized balls and coat with desiccated coconut.
  3. Refrigerate for 30 minutes before serving. Store in an airtight container in the fridge for up to two weeks.
